Tortilla Soup
Ingredients
- 1 can of crushed tomatoes
- 1 can of black beans
- 3 cloves of garlic minced
- 1 yellow onion
- Other vegetables on hand (squash, red bell pepper)
- Handful of diced coriander
- Salt
- Chilli powder
- Corn tortillas
- Chicken (optional)
- Feta (optional)
Instructions
- Prep garlic, onion, and vegetables
- Place in large pot and cook on medium heat
- Add beans, coriander, and spices
- Add crushed tomatoes and 1/2 cup of water
- Cut tortillas into strips. Fry until slightly brown and flip.
- Plate tortilla strips and cook chicken in the same pan.
- Cut or tear chicken into pieces
- Serve soup and top with chicken, torilla strips, and feta
